Soup, Salad and Pizza Dinner - Part 2 of 3 - Roasted Vegetable Salad

This is a super easy and very very delicious salad. Its a mix of greek and italian, if you will.
All the vegetables in here, except for the lettuce and cucumbers are slightly roasted to bring out the flavors.

For this salad, I used

Red Bell Peppers
Corn
Black Olives
Garbanzo (Channa) canned or cooked
Cucumbers
Cilantro
Lettuce - either iceberg or romaine or a mix of both.
Italing salad dressing
Lime Juice

In a pan on high heat, quickly roast the vegetables one by one - it should stay in the pan for just about a min - not more - you want them to just be roasted, not completely cooked. Sprinkle salt with a salt shaker when you roast them. A little bit of salt, just to bring out the flavor.



 

Add all the roasted vegetables to a big bowl.

 

Add cilantro on top and mix well.

 

Add the lettuce and then add about 2-3 tsp of italian dressing. Mix well.

 

And you're done...now tell me, how long did that take? Maybe about 7 mins? And look at how gorgeous it looks?

 

You could just have a big bowl of this for lunch! Perfect!

  1. What a wonderful salad to eat after a stressful hard day of work! I am really tired eating food cooked by me. Is the invitation to stay in your house for an indefinite period still open? :)
