Soup, Salad and Pizza Dinner - Part 1 of 3 - Hearty Tomato Soup

This is an absolute comfort food on a nice cold autumn evening!

You should try this out if you are a working mom like me with crazy projects at work and crazy kid at home ( Say Amen!). But, you still want a delicious dinner at home that you can cook up in less than an hour. How about Soup, Salad and Pizza? Yup - you heard it right, its Soup, Salad and Pizza!

I'm going to blog about each one separately though - or else there would be like a hundred pictures in one post and that's no good!

So, let's get started with the soup here.

I used canned stewed tomatoes - I usually never use canned tomatoes - but when I'm making tomato soup, I've tried and tested and stewed tomatoes work best - infact, dare I say sometimes even better than fresh tomatoes!



You really need just a handful of ingredients to make this soup. First, chop up some onions and fry them in a pan with a tbsp of oil till they are translucent.

 

Add the can of stewed tomatoes on top of the onions. Let this cook for about 5 mins. Then, switch off the stove and let it cool down.

 

When the tomatoes are cooled down, blend them to a smooth smooth soup.

 

Pour the soup back from the blender into a saucepan. This time, keep the stove in simmer or low. You want this to cook and heat up slowly for a smooth consistency.

The soup will be thick and to thin it down, I added vegetable stock. About 1/2 of this carton. If you don't have vegetable stock, you could use water to thin down the soup but added little by little as needed. You don't want a run down version of the soup.

For crisp croutons to go on top of the soup, here's my quick fix.

Chop up some white bread into 1inch pieces and put all into a mixing bowl. Add about 1 tsp of olive oil and give it a quick stir.

 

Move the bread into a baking sheet and bake at 350F for about 10 mins or until they are golden brown.

 

Fresh low oil, baked croutons are ready for the yummy soup!

 

Pour your soup into a favorite bowl - maybe a big one! Top it off with croutons! Get your award for the best mom or dad! Take all the goodness in - one spoon at a time!

  2. The soup looks so good, Anu! I don't use canned or tinned stuff often, but once in a while, I do buy canned tomatoes because they come in handy in many ways and I totally adore the taste of fire roasted tomatoes.
