  9. One question, whenever I use whipped frosting, the cake absorbs it and I cannot see a white layer like your pics show. I do sprinkle sugar water. any tips ?

  10. Hi Anonymous,

    For the whipped cream, the first important criteria is that it has to be stiff. Whip the cream until it is stiff - to test that, just swipe your whisk in the cream and it should form stiff peaks. Then, your cream is ready.

    And when you apply the stiff whipped cream on the cake, apply a nice thick layer. You can put a big bulk of the cream on the center and then place the top layer down - that will spread the cream out evenly. Or you could apply a thick layer and then place the top layer gently so that it does not push a lot of cream on the side.
