The...@ Madura - yes, this paneer does hold up good. The best option would be to make this paneer a few hours ago and let it sit for about couple of hrs to set firmly. Then, you can use it in all the regular paneer gravy dishes too. <br /><br />I squeeze out the water completely - you can even let it hang for about 15-20 mins if you want to. You can follow the normal method you make paneer - but just using buttermilk in place of lemon or vinegar.
